    can you freeze plums for winemaking later on

    Last year I just cut the plums in half, remove the stones, vacuum pack them into big bags and then freeze them and they keep well until needed. When defrosting they turn mushy so you don't need to physically mash the fruit youself :) jobs a gud un.

    Length of time in pressure barrel

    As long as theres no leaks for oxygen to get in it should last for about 12 months. Longest I've left a beer in a pressure barrel is about 8 months, still tasted fine. A 4.5% stout could be brewed in October so by December it will have reached it's peak condition.

    Hi. It shouldn't make too much difference, the darker the extract the darker the beer so as your brewing a stout I would just go with Dark Spraymalt. Dark DME alsos adds a more roasted/chocolately character to it (also desirable in a stout). Or you can use Light DME and steep dark roasted...
