    I have the slight problem of living in a flat, so a cool basement floor doesn't really exist for me. The coolest i can get is the bottom of my dark wardrobe where the beer sits when its bottled. otherwise everything is done at 20ºC (and slightly higher when summer turns up)

    Lalvin Ec-1118 Champagne yeast says to use 25-40g per 100 litres. so a 5g sachet should be fine

    I think it depends on your yeast. I am using a yeast that says 40g per 100 litres, so this comes to 5g for 12.5 litres.

    Do I need a thermometer?...(for yeast)

    I'm about to do a Brewferm Gold, and it says: Dissolve the brewers yeast in half a glass of water with a temp of approx. 25ºC. Stir this into the brew which is at 20ºC? Do I need to do this? Or can I just sprinkle it onto the brew like I usually do? (I dont have a thermometer) Cheers.

    Definetly use 2 carbonation drops for a 500ml bottle. 1 is drop is not enough.

    The first 24 hours where fine temperature wise. Its now on days 7,8,9 of fermentation that its gotten hot. (Thanks for replying)
