I'm making some Victoria plum wine with 8kg of fruit. In his book CJJ Berry says it can be thin and to add a lb of grain, but that's about all.
So I got some Wheat malt, it's all chipped up in a bag and I poured some boiling water on to soften it and will leave it overnight.

What you need to do is just make some. Buy the yeast with sweetener already in it.
When you've made it you've got a baseline to work from, you then adjust your recipe to suit your own taste.
What one person tastes or wants is totally different to another.

Sadly I forgot to take SG readings, but yes I like it strong. I make cider at about 9% as I enjoy the hit and don't drink a lot in quantity.
I added another 5l of juice to bring the quantity up again, but not as much as there was in before.

Because I use a sachet of yeast with sweetener i'm pretty much stuck to making 25L so in it all went with Pectolase and almost 1kg sugar, leaving about 2" clear at the top. The apple cider i'm used to...
I couldn't think of a better name for it (there probably is one!) than cider, but what would happen if I brewed like I do with cider, but replaced the apple juice with Pineapple instead?

I think a lot of people believe they can make proper cider from the minimum of ingredients (all natural of course) and that it will be tasty and full of body. It's usually foul and/or suitable for people with a certain kind of odd taste and lead lined stomachs because that's what 'proper' cider...
You're worrying about nothing, well in my world you are - once it's finished you can't make it stronger, but you can always make it weaker!

The only time I buy commercial cider is to compare against mine, we went to a food and drink festival in Summer and all the craft ciders were watered down too.
