Looking at 20litre or 50litre Braumeister. Is cooling jacket effective on full brew and half brew???

First all grain brewer and disappointed to find clumpy floaties on top. Any ideas on type of infection though hoping it might be coagulated proteins????

With 50% at 65oC and 50% pre-cooled at 5oC the resultant temperature would be only 35oC - another 15oC to go. I hadn't considered using ice as part of the water volume directly. Any views on whether this would have a detrimental effect on brew?
