    Gotta say though, even if the airlock is not as good a gauge as a hydrometer, strange to have the activity stop completely after 2 days. Unlikely to get a sudden leak...Eerie silence:-?

    What about dark ale malt as opposed to brown ale malt? Is that leaving burnt taste / astringency? Needs lagering before drinking? Says it is a base malt so I suppose it needs mashing and can not be merely cold steeped.

    Planning to make some brown ale. Not sure how to go about the malt bill. I have some biscuit malt, brown ale malt, caramel malt, maris otter pale and munich. The brown ale malt can be used up to 30% of the malt bill according to the dealer's web site. Cara up to 10%, biscuit up to 15% etc...
