The two Beaverdale kits we have tried and stuck to are very smooth and easy to drink. Some may prefer a more acidic wine but not us.

I added 20g. Northern Brewer and 20g. Citra one week in. It tastes smooth to me.
The carbonation is a bit high compared to what I got with 200g. in Evil Dog, just right.
Using the recommended levels of priming sugar did not produce sufficient carbonation. The problem was worse using mini kegs and a king keg. Big head and no fizz.
I use 30 litre buckets fitted with a 100w. aquarium heater at 22 deg. Don't use a 50w. as it will float and not work.
I shorted this to 21 litres and added 400g. dextrose. 1.048 to 1.006. I have just tested one after a week conditioning (200g. dextrose) and it's feckin lovely. My first three attempts at a red ale were failures.
I am going to try the King keg again. The safety valve does not allow the pressure to exceed 6.5 psi. Can someone suggest a kit that would carbonate well at that pressure.

I set this up again today. It's the best out of my 8 initial kits. I added 20+20 citra and pacific jade and will add the other 2 at the end. I also shorted it to 21 litres as I like a very strong gargle.
I did the bad cat but it turned out very flat and low on flavour in comparison.
