Since filtering off the pulp the date sherry fermentation rate is steadily increasing. Wonder if squeezing the pulp in a fine bag has released more sugars? I've kept the extra liquid in a bottle for adding after racking.
Update - been fermenting on the pulp for five days. Strained into DJ this arvo. Smells very good and still fermenting well.

My thought was that more juice = more flavour - but I'm still learning / experimenting so I'm ready to be delighted or disappointed as the case may be :)
Did you stabilise with potassium sorbate?

It was a real twisty turny plotline. The only episode that I thought was a bit slower was the retrospective one - but that could just be me.

I know I know....its a bit Niles and Frasier but I have to admit I like sherry/port etc so thought I would try a homebrew approximation. The basic recipe which I have adapted is from a thread here and I will copy it onto the end of this post.
I used two 350g packs of Whitworths blocked dates...
This was begun on Sept 8th. Again I followed the CJJ Berry recipe but with a slight tweak.
CARROT WINE
Ingredients:
75cl bottle of James White carrot juice
1 lb. wheat
4 lb. sugar
2 oranges
2 lemons
1 tablespoonful raisins
Yeast and nutrient
Spring water to 1 gallon

I don't know the average sugar content of elderberries but in my CJJ Berry book he suggests 3lb of elderberries and 3.5lb of sugar to a gallon. It isn't noted what SG this might be or indeed what volume of alcohol is expected but generally his recipes are of a good strength. The sugar...
Shame about the leak. It'll be interesting to see if that really is a substitute for WGJ - especially if we never see it on supermarket shelves again! :)
Hadn't thought of that. Would work out that about 25g equates to a litre of juice. Do they do a small pack to test it out I wonder?
