    Back in the old days (and some "cyder" producers now) just use natural yeasts which are naturally present on the fruit itself. supposed to be very nice indeed but I would imagine you would have to be very careful with sterility.

    Oh, this extract kit required me to steep the grains for 30 mins, then boil for an hour, adding hops at the beginning, at 15 mins and 0 mins.... boiling the whole volume :s was a bit of a ball-ache tbh. oh well, it was a free kit (from the recent HBC giveaway).
