    Can the wine spoil if it ferments too long? I'd rather leave it and be sure it's done than risk giving someone bad guts. I'm in no rush.

    I've been making the Rose that's in the opening post of the big wow thread. It's been fermenting for 2 weeks. Slowed right down now but I can still see bubbles rising in the wine. Is this ok? Should I attempt to stabilise? I haven't taken a reading.

    Picked up some finings in Wilkos yesterday for a quid. Says it will treat 23l of wine but I only want it for a 1 gallon batch. There aren't any instructions with it. Is it ok to add it all or should I dilute some in a glass of wine and add a quarter of it back?

    I left another Demi John full in the garage for a further week and it has lightened up a little more and looks great.

    I know. There wasn't enough to fill that bottle so I'll drink it tonight. Got a load of full bottles that I've corked.

    Well here is the finished product. It's a bit darker than I expected but nice and clear now.

    I've managed to make one from a coat hanger and used it with my drill. Wine is brown again lol. Will update in a few days when it clears again.

    Ok thank you. I've just been out and stirred it up again. It is indeed full of gas. How disappointing to see all the sediment mixed in again

    What do I do with the coat hanger? Just stir with it? How's that any different to a long plastic spoon or paddle?

    Added stabiliser and gave it a thorough stir. Was fizzing like mad when I did it. Had stopped by the time I finished.

    Yes but I'm starting to think not enough. I followed the instructions to the letter. If it is a gas problem is it to late to save?
