Which yeast for my saaz brew?

Evening all and happy new year. My first brew of the year is the Greg Hughes saaz. Except I don't have the wyeast 1056 he recommends. I have s04, s05, nottingham and some gervin gv12. The brew will be light coloured and I'm aiming for an abv around 4.5. What would you go for? Simon

    Infected?

Hello all. Care to confirm my worst fears about the latest batch? Three week ferment. White mould on top of floating yeast, cloudy as f*ck, strong fruity smell and taste, og only reached 1.020.... I've bottled anyway since sometimes a less than promising beer can turn but.... Simon

    Rescue flat boring beer...

Hi. My saltaire blonde clone is disastrous. Flat, and tasteless. Can I pop the bottles open, lob in a single hop pellet (saaz, low alpha) and a smidgen of sugar and recap?

    Achieving target FG

Hi I'm hitting my SG targets pretty well but failing to get to the stated FG for many recipes. For example the recent stout that called for 1.007 FG... I achieved 1.012. Is it because of the yeast strain (tend to use GV12, Safe ale04 or 05)? Amount of yeast? I use approximately 1gm per 2...

Does over pitching lead to long conditioning times?

Hi I'm on my fourth AG and learning along the way. My process includes a three week ferment and then bottling. I get nice looking, clear well carbonated beer but it seems to take an age to mature. I'd say eight weeks in the bottle at room temperature before the beer is kind of ready (not that...

How's this for a recipe for wheaty beer?

Hello I'm going for my third AG brew tonight (probably). Rather than doing the sensible thing and buying the required ingredients for a specific recipe, I've assembled a box of stuff that appealed to me while I was in the shop (child/sweetshop...). Anyhow, it's not completely random. This is my...

Do I have to rinse Milton?

Hi So it's bottling day and I've run out of my usual steriliser. I'll be transferring the beer to a king keg equipped with a wand, so I need to sterilise it. I've picked up some Milton liquid from boots and it says on the side you don't have to rinse. Is that true also for my purpose or do...

Dry hop in keg to revive a dull brew

Hi I've managed to create a nice looking, clear, moderately strong.... but somewhat flavourless beer (in spite of quite a lot of hopping). Any good reason why I shouldn't lob in a load of cascade and force carb and see what happens? Simon
