    Ah that's annoying. Last year i put campden tablets in at the end to stop the yeast. However i read in a few places to put them in for 24 hours beforw putting in the yeast to kill off any wild yeasts. Most places said 1 tablet per gallon, what would you recommend?

    Thanks for the advice. It did look the sugar I put in a week ago had began to carb it but that seems to have gone now. Sure do have a pic, excuse my brewing partner. As you can see from the set up it was a 2 man job!

    Thanks for your comments. I definitely think the suggestion of smaller batches until I find a good method is worthwhile doing! I've just taken a sample, 36 hours or so after the 1008 it now at around the 1000 mark. Does it need bottling asap or will it keep for a few days until next weekend...
