    It seems a rather long time for an ale yeast fermentation. What temperature were you fermenting at & what was the final gravity?

    The original question from Dr Mike stated 1ºC and he then asked why I wasn't that keen on the idea. Also, I don't think many people have a cooling system to be that accurate. Also crash cooling doesn't really allow for a diacetyl rest.

    Crash cooling can form ice crystals which can alter the beer you've brewed.

    I would be hesitant to use the crash cooling method. If you use a standard wheat yeast (Wyeast have a good one) and crop from it a few times, say 5 or so, it starts to become more flocculent and thus you are left with a clearer beer.

    Hoppy Wheat Beer

    I've tried a few US commercial wheat beers that are highly hopped. They tend to lose the wheat beer qualities and are just quite hoppy. That said, I may have just been unlucky with the beers I tried and there are some great hoppy wheat bears out there.

    My mate's dad used to buy the old casks from Bushmills to turn into garden furniture. If you left them out in the sun they'd sweat out whiskey. The stuff was awful, tasted like liquid wood, but you would only need one glass before you felt rather sleepy.

    You were right by one of the best distilleries in Scotland - Edradour! It is the smallest distillery in Scotland but is just awesome.
