    Elderflower Wine - taste ..

    I am just bottling a 2020 demijohn of elderflower wine. Beautifully clear gorgeous colour, with a little sparkle, but disappointingly tastes quite soapy 😩 I seem to remember my mum saying it might be something to do with too many flowers?

    Not fermenting?

    What should I do?! ive made some buckets of blackberry wine, but accidentally left them for 2 weeks instead of just 1 week before siphoning off the berry waste etc and transferring to demijohns. It’s now not fermenting!! What should I do??!!

    When you rack into demijohns to enable natural clearing of sediment, do you need to top up with anything to minimize the air at the wine surface? Subsequent rackings are les and less volume, but concerned if I top up with eg water, they will become more and more dilute? Or do I need to rack into...

    that looks good! Drying out is my problem too as I use a humidifier over the winter to keep the house dry!

    this is it. Not sure if it would cope with initial fermentation or whether just for racking, but allowing co2 release in absence of air entry ?

    Ive always used the water filled airlocks for wine fermentation in the demijohns. How effective are the CO2 releasing bungs?
