    Wilco Chardonnay infection?

    It's one of the premium kits made by Muntons, I think. The wine has fermented and has been stabilised with the finings having been added 5 days ago. The wine smells fine, but it's brown in colour. It looks more like an ale than a white wine. Is it infected and should I just pour it down the drain?

    I put it on yesterday and the airlock was bubbling within a couple of hours, but over 24 hours later it's still going at the same rate, a bubble every 30 seconds.     Educate me about non rinse cleaner please.

    I've been using VWP since I started brewing last August but I just got tired of all the rinsing out so I decided to try Chemipro oxi instead. I'll tell you how I've been using it and I would be grateful if someone could confirm that I'm doing it right. Or tell me what I could/should be doing...

    I forgot to add the packet of bentonite to my red wine kit

    The wine has fermented out and I've just racked it off the sediment and put the stabilizer in. Should I add the bentonite now, or should I just forget about it?

    Does a stuck ferment mean no secondry fermentation?

    I've just bottled a muntons conkerwood ale that stuck at 1022. I tried everything to get it going again but it was going nowhere, so I bottled it. I'm assuming if the yeast couldn't keep going to get the brew down to a lower fg, then it won't get going on the priming sugar in the bottles...

    White wine too dry.

    I bottled 21l of white wine 3 days ago and now, after a little taste, SWMBO is saying it's far too dry. What's my best option at this stage? Should I pour it all back into an FV then back sweeten the lot and re-bottle. Or, could I back sweeten the bottles individually?

    What temperature is my brew?

    I bought one of those stick on strip thermometers which I stuck half way up my fv. The 16 deg is showing up blue and the 18 deg is showing up green. :? I also have a more precise old style thermometer which is laid on the fv lid. That one reads 20 deg.
