    Finings and Fizz?

Hi all, I was wondering if finings affect fizz at all? I have a brew on the go that I am hoping will make a reasonable Cava, my plan is to rack it off, leave it settle then rack again into a pressure barrel, add some sugar, leave to fizz and settle again then bottle into plastic bottles...

    Tartar?

Hi all, Can anyone tell me what cream of tartar and/or tartaric acid add to the brew? I've got hold of some old sherry recipes that I am trying to adjust to my larder/taste but am unsure what sort of effect these have as I haven't come across them before. Thanks in advance

    Adding Flavour?

**Warning! - Complete newbie - Stupid questions might be asked!** Hi all, I've recently started a couple of wine kits (as ever with a new hobby I've gone overboard and one kit just didn't seem to be enough...) and the first kit has just reached the stage where the bobby glass thing says it's...
