    The Homemade Pizza Thread

Wow ... been forgetting about the "Pizza Wars". So, I'm back! More-or-less over-came the change to my pizza flour (new year's harvest). It's crazy how a change like that can have such an impact on flour. Similar 40% Poolish (I adjust percentage using that "Pizza App" calculator so no water...

    Befuddled by the Defuddler

And ... still working on it! This was a whole lot harder than I first thought! Getting a decent "Alkalinity" reading for sub-100mg/l (as CaCO3) water, that is (the water companies will most likely be dosing such water with lime to get the pH up). The Hanns Alkalinity Checker I was putting so...

    Tilt/Grainfather temperature anomalies!

Think what you're doing! At 4C thermal convection currents go into reverse, and so there isn't much (any even) thermal convection for the Tilt to react quick enough to the impending freeze. "Cold Chilling" (hey, thanks for avoiding my trigger phrase! All that gawd awful "cras... ing") to below...

    Tilt/Grainfather temperature anomalies!

The Tilts themselves are not calibrated except at the factory, The client reading the Tilt has the configuration. It's multi-point configuration and as accurate as you wish to make it (within the tight limits of the device ... well within 0.5C). This is an oldish trace (July 2022) from a TiltPRO...

    Tilt/Grainfather temperature anomalies!

Wretched isn't it? We've been so cock-sure the thermometer is telling the truth and then we go and put more than one thermometer in it. One thermometer and everything is peachy. Two thermometers and I guess the beer must go down the drain. Try putting the fermenter in a...

    water additions

Well, I did. Stuffed it through this on-line calculator: Alkalinity Conversion Calculator - hamzasreefs.com Came out 7.2 ppm. That'll be as CaCO3 ... always is when not told, because those writing it will think there's nowt else. So that'll be just short 9 mg/l as bicarbonate ... close enough...

    water additions

@dad_of_jon: Although it's not "Alkalinity" you're testing for, I've just finished a tortuous session measuring my water this evening. Like I said, the Public Report gives very much like yours ... 20.83 mg/l as CaCO3 (25.42 mg/l as Bicarbonate). But I also said it won't be that at your tap (the...

    Befuddled by the Defuddler

Still working on it! I hope to post the new version of "Defuddler" within a week which I hope will meet your (@ARNWD ) needs. Meanwhile: Here's something it won't easily handle (sourced from US of America) ... The topic matter is well off-subject! The thing to note is six wells, from which...

    water additions

If my babblings have succeeded in getting a single person off using bottled water instead of using their very low alkalinity Welsh water, I should be proud of myself😁 ... bit worrying about the "farty smell" though. If the Campden tablet causes it, I'd be surprised as it's so little. You could...

Simple Water Treatment for an Idiot!

After months of inactivity on my "Defuddler" spreadsheet I renewed some effort to make it fit a different scenario. But I remembered the "Battle" water profile and thought I'd give it a go ... Despite the unusual water the new "Defuddler" has no problems extracting valid data from that water...

    Chest Freezer Fermentation vessel problems/questions

Of course you are! That's why the problem goes on, and on, and on ... "Everyone" loves an Inkbird. :groupdancing:What could they possibly do wrong?

    Chest Freezer Fermentation vessel problems/questions

You know. I'm off to dentist now, so I'm not starting another rant. There's loads of ranting about Inkbird on this forum (not just me!) going back to ... 2018 wasn't it? I think the conclusion was ... well, they're cheap.

    Chest Freezer Fermentation vessel problems/questions

Ah, I'm trying not to be too negative about them. But you're right ... They are just liars. (With reference to the ITC-308).

    Chest Freezer Fermentation vessel problems/questions

It does say that doesn't it. And it's not an outright lie. It only suggests it is "calculating from the last off" <sic> ... which can be misinterpreted. It doesn't say "calculating from the last elapsed delay", which it doesn't (that would be a lie), instead they are happy for people to assume...

    Chest Freezer Fermentation vessel problems/questions

As @Davegase shows, Inkbird do not suggest in the manual that the "PT" setting does anything other than I said. I stopped ranting about the "inherent defect" because it seems the "compressor delay" was an un-necessary extension anyway: The "defect" (which was doing the opposite of a "compressor...

    Chest Freezer Fermentation vessel problems/questions

Garbage. You've only said it to wind me up! Well, I'm wound up ... The "delay" only operates when you switch the Inkbird on. When the time elapses, if the Inkbird detects it should be turned on, it turns on. From then on you are allowed to do what you like. Until you switch it off and back on...

    Befuddled by the Defuddler

Updated "Defuddler" partially. Read about it <here> (Jim's Forum). I'll update it properly later with the "advanced", or "Bogsnorkler" mode. At the moment it's only downgraded to disallow unsupported "tricks" (it wasn't intended to do clever stuff, and it can't, so needs another tool because it...

    Befuddled by the Defuddler

The issue that cropped up is due to the unlikely (imaginary?) connection between "Alkalinity" and "Total Dissolved Solids". I was adding up the major ions (as anions and cations in mEq/L units, but not any "as" bicarbonate), subtracting the anions from the cations, and declaring the difference...

    Befuddled by the Defuddler

@ARNWD: I'm gathering some "errors". I'm probably stretching the original idea outside of its boundaries - adjusting "Alkalinity" while assuming other settings stay still. Can't happen. I'll try to recover the situation, but meanwhile be careful of (perhaps that should be "ignore") this "new"...

Water prepping before all grain brew advice needed please

Gawd, this was ages ago. I'm trying to correct where I've mixed up Alkalinity kit with the (changed) Calcium kit.
