I was going to rack some cerveza into a second fv and add finings, leave it for 4 or 5 days and then bottle and store, will this cause any issues? could I just add finings now and ignore the second racking?...any help appreciated..

you don't feel the speed of fermentation is an issue then? thats my overriding concern it just seems very quick to me...thank you for your help by the way..
