    Geordie Winter Warmer

    Just opened a bottle of mine. Thought it was a nice pint, wasn't watery at all (I brewed it about 5 pints short & added tin of golden syrup on top of the recommended sugar). I think I've overdone the junipers a bit, as the flavour is a bit over powering

    Cooper's Stout w/Chocolate & Vanilla

    calculating alcohol when using fruit pulp.

    My blackberry wine, for 5 gallons, I put in 8kg of fruit & 6kg of sugar. From this I get 14.5% I've done plum before, which I've used less fruit than you (1.8kg per gallon) & added 400g of honey, with 1kg of sugar This got me 13.5% So I reckon you'll get something around that

    Last year they replaced all of their Youngs chemicals with their own, which are no where near as good, Finings for example, Youngs clear in about 24 hours, Wilkos about a week. Yeast is loads more expensive. £1 for a 5g sache , compared with £1.50 for 100g tub

    Only really done BrewFerm (had the odd one or 2 others) But..... in no particular order Grand Crew Old Brown Xmas Framboose Oranje Bock Are probably my top 5 kits I've done so far

    I really fancy doing something like that with the cocoa powder. I'm also tempted to chuck in a few cartons of apple juice & knock up some 'black velvet'

    Elderflower Champagne

    I have an elderflower & strawberry on the go, what's the best way to get it sparkling after using finings (as i'd like it to be clear)? Do I just add a bit of sugar & wait a bit longer? Did a cider like this & it worked

    Strawberry wine - help please

    Nothing wrong with it. Learn from experience, hold a bit liquid back while it's fermenting as some do tend to bubble over, then add it in later when it's fermented out a bit

    What wines benefit from aging?

    Country wines are generally ones that aren't grape. (Think there's some sort of EU law on it) But generally, it's your blackberry, Elder & that sort of thing I've drank them not long after bottling with little aging & they're nice enough. If you make loads, they'll be aged by default of not...
