Folks,

I am looking to make a clone of 5am saint - I have got the recipe from DIY Dog but have dropped the crystal malts down a bit, just looking for some confirmation that the recipe looks OK? Should I maybe also drop the amount of caramalt as well?

It just seemed like a lot of crystal malts and I have heard rumors of people thinking some of the recipes were not 100% accurate. For the 20L batch DIY Dog has the following grain bill...

Extra Pale 2.56kg 5.6lb
Caramalt 0.88kg 1.9lb
Munich 0.63kg 1.4lb
Crystal 150 0.38kg 0.83lb
Dark Crystal 0.13kg 0.28lb

I would roll with it. 5am saint is known for its caramel flavours
 
Same. Others have done the recipe with great success, and it isn't like the sweetness won't be balanced by the hops.
 
I always grin when I see a brewdog hop bill. You are going to be one busy boy during the boil with that lot. If you do it then please let us know how it turns out. I'm rather partial to a bottle of 5am saint myself.
 
OK, I went for it!! Will let everyone know how it turns out. I dropped the medium and dark crystal a teeny bit as I doubt I will get as good extraction of the hop flavours as they do, will also up the additions as well to try and keep up with brewdog!

How did this brew turn out? Did you mash at 62°?
 
The first few were good.as expected I did not quite get the level of hoppiness but it was good. It quickly lost the hops though after a few weeks. Would do it again but up the hops next time.
Mash temp, can't remember but I assume I did mash at 62.
