500g raisins boiled and simmered for 30 mins
Mug of red bush
750ml Pomegranate juice
700g sugar
Yeast and nutrient

Pressed and sifted raisins
All in the DJ topped up to shoulder with water

Forgot to take OG but estimating around 1.095 will adjust at racking stage .

I'm not sure :
I've recently put two DJ's of Chippy's simple rose on.
1) with redbush tea
2) without

1) stopped and cleared without any chemicals.

2) appeared to stop , but did not clear and had to add stabiliser and finings.

Not sure what this does to taste as not got that far in , but prefer the idea of 1.

Interesting. Was wondering whether finings would still work if no stabiliser was used.
 
Yeh me too, but Tau said that wows clear fine if fermented out to 0.990 without stabiliser too...,
Might try that with one of my next ones

Juice Wine will stop fermenting at .990 (ish) and if you have ever left one 3 or 4 weeks you will see it also starts to clear so you could if you have time let it clear naturally as well, bear in mind if you don't stabilise your wine will be as dry as a bone.
 
I've stopped this tonight as it's about as dry as I want it . I'm interested to see how this pans out compared to the other raisin tea wine I've recently done.

Most wines will clear naturally given time, I had a damson wine that didn't and finings had no effect, I used pectolase in the end, even though there was plenty at start, but the plums were well boiled so I put it down to that.
 
This has cleared nicely - way ahead of the raisin tea wine I made. I've moved it into bottling position for tomorrow night. Had a little taste - very nice !

6 bottles of loveliness - really impressed with the taste and body of this one.

Will most definitely do this one again.

Opened a bottle of this tonight. Very nice - medium fruity wine.
I'm definitely finding that with raisin based wines they are best left a good few months before supping as unlike a straight wow they do definitely improve with age.

Really impressed with those bottle tops too. Look a bit ugly when recycled for 2nd time but do the job

Great with collar when first used and good for gifting.


To be honest as i am not giving my stuff away i decided to cut the collar off and just use the caps which i have done many times and they still seal 100%.
