Peach, Apple and Mixed Red Fruit

Just made this from what I had in but it turned out really nice.

Peach 8 tins
1Kg Mixed red fruit frozen (Strawberry, Black Berries, Raspberries, Blackcurrants)
500g sultanas
3tsp of pectolase
Roughly blended in bucket with hand blender and left for 12Hrs


Apple juice 4l and fruit added to F.V. and 4Kg (approx) of T&L sugar
Topped up to 21l with hot water.

When cooled to 30c
Added more sugar to get required S.G. topped up to 23l
S.G 1.090 (but I'm sure nearer 1.100 as still sugar in the fruit)
Gervin GV4 yeast added
No temp control but day time constant @ approx 20 -22c

Racked to new bucket after one week leaving fruit behind.

Another two weeks and racked again for clearing.
Added two crushed campden tabs and two tsp potassium sorbate
s.g. 998

Result a nice looking light pink slightly sweet rose.
The strawberry note is very nice but all the fruits flavours come through.

Will be making this one again
 
Just an edit on this one; the above worked well but I now increase the apple juice and reduced the sugar.
 
I missed off the OP that I added a campden tab to the fruit when initially left overnight after blending.
