Evening peeps

In the mood this week so stuck on some TC.... with a wee Christmassy twist 😃

Ingredients
16L Tesco AJ
3 x Lowicz blackcurrant
5tsp pectolase
2 x cinnamon sticks
4tsp all spice
2 x star anise
1 x vanilla pod

Method
Poured in all juice
Added spices etc
Topped up with water to 25L
Temp 20 degrees
SG 1.050

Cost... about £16

Bunged in yeast (cider yeast with sweetener, from eBay), popped in the cupboard

Intending to prime with 300g sugar so estimating abv when fermented out to 1.000 is about 7.11% 😃

Yes a similar one with just 2 bottles of b/c syrup, and another without the syrup and some cloves added too.. pretty Christmassy that one was !

Yum tasting pretty good, SG down to 1.010 so this one should be ready to bottle early next week reckon

Not too overpowering with the spices either 😃

Some of my 5 a day coming next week, bottling night 😀

Pretty murky but will clear perfectly, no finings required 😃

So basically you make a 7% wine (no added sugar), then pour into a Grolsh bottle with some sugar?

Did you clear the wine at all or does it happen in the bottle?

How much sugar per bottle and what size bottles are they?

What cider yeast with sweetener exactly did you buy from eBay?

Might give this a try thanks !

:grin: yes but..ahem, that's cider ! rule of thumb: <10% abv = cider, > 10% = wine :mrgreen:

:grin: the cider clears by itself in the bottle, after a week or so

How much sugar per bottle and what size bottles are they?
:grin: I use mostly grolschies (450ml), and some coopers pet 500ml too, with about 7g of sugar per bottle (I always batch prime, so use about 350g of sugar for a batch started as 25L)

Brilliant, I have 16 grolshies so might part recreate this one !


So batch priming is just making a syrup with the sugar and adding it to the Fv just before syphoning to bottle ?
 
I prime the stuff with more of the blackcurrant syrup, but siphon off to a clean fv as it needs a good mix up, then bottle immediately

So just to be clear ... make the cider with 2 of the 3 syrups then use the third one as your 300g sugar ?

Would you make any changes to it having tasted it.

Ah sorry mate, I did do this one with sugar for priming right enough...

Yes so just siphoned off into a clean fv, on top of the sugar solution and gave it a good swirl before bottling straight away

Pretty happy with the taste, not too overpowering, light and fruity 😃

Update....
Majorly over primed, even when ice cold, still fizzes up a bit, don't lose any if pouring into a wet glass but would tone down amount of syrup used for priming by 25% next time
