I was down the market few days ago and I got about 18 nectarines for £2.50.
Took them home, taken the stone out of each and chopped them up. Added a kettle full of water to them and put them on a low heat. I added about 300g of raisins and 1.5kg of sugar.
Left them for 24 hrs then warmed them up again, then the smell was awesome.
Strained them off and poured into dj.
Topped up with cold Water to 3/4.
Added heaped teaspoon youngs strong yeast and teaspoon of nutrient.
Within 10 minutes the airlock was away.
It smells fantastic but I haven't added tannin, citric etc.
Should I or is it to late.
Been brewing for about 2 days.

I will do that now.
I have just added a little bit of pectolase and it's still bubbling away.
I have plenty of room in dj so I will add some tea.

This wine has been bubbling away consistently for about 9 days now.
Slowing down but still keeping me awake at night 😁.
