I have just started 23.5 litres of wine.

5 litres White grape juice

5 litres apple and raspberry juice

3 teaspoons youngs super wine yeast compound.

5 teaspoons nutrient

5 teaspoons pectolace

5 teaspoons citric acid

5 teaspoons glycerine

Tannin = 1 litre of black tea (5 bags stirred several times as i was putting all the ingredients together)

Some members are finding their supermarkets are not stocking White grape juice but have Red grape juice, Red grape juice goes well with apple, cranberry, pomegranate or raspberry juice, it does not go so well with orange juice.

hi all, put this on today, juice in asda was 3 for £3 in the chiller section if anyone interested..
2x 1ltr asda red grape juice 70%,strawberry puree 20%, kiwi puree 10%.
750g sugar making 1kg totals.
usual other additions teabag tannin, pectolase, citric, nutrient, glycerine, yeast.
The juice looks lush when pouring, high hopes for this one.

Review -

Well I bottled this tonight after 3 days of adding the finings.
Very clear, lovely rose colour, smells great, tastes even better with the strawberry coming through nicely. Tested gravity at bottling was 1006 which my wife likes. Maybe about 11% although I didn't take an og reading.
Would highly recommend you try this one, a bit pulpy on initial fermentation but rack it in between the first and final stage and it turns out great. (I did top-up with half litre of a/j at this middle rack).

6 x bottles red grape juice with strawberry and kiwi

1 x bottle of mulled red grape juice.

2 x cartons of apple/raspberry juice.

1 x carton of apple juice.

All the above are 100% juice.

3750g sugar.

Tannin - 1.5 litres of black tea (10 bags)

4 teaspoons youngs super wine yeast compound.

5 teaspoons Pectolace

5 teapoons yeast nutrient

5 teaspoons glycerine.

250ml White grape juice (Concentrate)
850 Grams Sugar for starters (Trying for Medium Dry)
1 Tsp of Glycerine, Citric Acid, Nutrient, Yeast and Pectolase
1 Cup strong tea (3 teabags)
S.G. 1100
F.G. 994 About 14%
 
I'm just trying this one I saw posted from wino2012 post.


1 ltr WGJ
1ltr Pineapple - not from concentrate
1 ltr apple juice
700g sugar
pectolase
cup of strong tea
juice of 1 lemon
nutrient
GV9 Champagne Yeast
Juice (no pips) of 3 passion fruits

Only thing I'm not using is the champagne yeast.
 
Started this, will edit when I see how it turns out:

5L PET DJ - 1150g sugar total

1 bottle Lowicz Strawberry 440ml
1L Vitalit RGJ (because I had one left)
1L AJ from concentrate
520g caster sugar - Whizz method instead of melting it
1 generous tsp YSWYC
1 generous tsp Pectolase as got a chill haze last time I made a WoW
1 tsp glycerine (never used it before)
small tsp citric adic
1 tsp yeast nutrient
No tea bags as heard the syrups are fairly tannic though not sure is strawberry is.
Topup with water to 4.5l
 
Got 10 gallon on the go...:)

25l RGj & Apple with a chopped up melon & 2 large pears lobbed in. (5 rgj 5 apple juice and one raspberry, apple and grape)
1 gallon rgj & summer fruit
1 gallon rgj + apple & mango
3 gallon rgj & apple

Topped up with water and all the usual suspects.
Forgot to get glycerin so may just leave it out.

Think i'll make one of those degassers Chippy
 
Got this one in the DJ now;

750ml of Pom juice (100%)
2no 1L Apple,Grape and Raspberry (40:40:20 - Total 100% Concentrate)
600g Sugar
Plus the usual extras - black tea, glycerin, etc.

Smells amazing, so I've got high hopes!

Too many pages to read the full thread, but can i take it most people are adding finings after the first racking and leaving a further week before botting?

I take it that de-gassing is also required immediately after racking?

Rosé wine (A forum favourite)

1 litre Red grape juice.

1 litre Apple Juice.

800g Sugar.

1 tsp Tannin or a mug of very strong black tea. (3 bags stirred every couple of minutes as you put the rest of the ingredients together)

1 tsp Yeast (i use youngs super wine yeast compound)

1 tsp Yeast Nutrient.

1 tsp Pectolase.

1 tsp Glycerine.

1 tsp citric acid or juice of one lemon. (optional)
 
Having not experimented for a week I kicked off a little WOW after finding inspiration from the old wine recipe book I'm reading:

Apple and Grapefruit 5L

1L Apple Juice
1L Grapefruit Juice
0.5L Red Grape Juice
1tsp Youngs SWYC
1tsp Pectolase
1tsp Glycerine
1tsp Citric acid
Mug of strong tea
680g sugar
Topped up with water

OG 1.090

Hoping for a dry one with a citrus kick.

I've just degassed and stabilized my first ever WOW, and it tastes amazing already (had a sip of the test jar when taking SG), and is a deep deep red!

Recipe below..

P.S. Thanks to Richards red, and @Vinotinto - I don't know how to tag a member so they see this.

x8 litres of RGJ, asda del Simon £8
x2 bottles of wilkos grape concentrate £6
x2 tsp glycerine
x2 tsp pectolase
x2 squeezed fresh lemons
x6 teabags brewed in 1L water
x2 tsp nutrient
x1 sachet youngs bergundy yeast £1
x2 l boiled water, disolving 1kg sugar 50p


started 12/11 , SG = 1.104
Went crackers and frothed over my bucket, lid sat on loose, no airlock.

19/11 - pushed lid firmly home, and added airlock to bucket. No bubbling to speak off, so think it had finished by then. Left for 1 further week.

26/11 - been busy, and wanting yeast to clean up - racked to x2 DJ's and a x2 litre PET bottle. SG = 0.990

I racked onto wilko stabilizer, which already contains Campden tablets in it.
Added 2ml Wilko finings pack A, and 10ml pack B to each DJ. Chucked the rest, as I couldn't fine kwik clear. Within hours I can see it working.
Stuck in me garage @ 9 degrees to clear.
Will bottle and start drinking next Saturday.

For not much over a quid a bottle, this looks promising..

I'm going to do a controlled test, smaller batch just 1 gallon, and leave out the wilko RGC to see what happens.

Oh, did have a good WOW, with a Tescos juice concentrate recently as well.

240g Youngs red grape concentrate
500ml Strawberry & raspberry, hidden in ingredients was 7-9% blackberry, reason why I tried it. Turned out a good red wine after 4-6 months.
700g sugar, pectolase, nutrient and tannin, didn't use camdens or citric, youngs super yeast compound.
 
Just bottled a variant of this:
1.5 lt Lidl AJ
1lt Lidl RGj
1 bottle Lovich raspberry syrup
1 mug black tea
1 tsp each of pectolase, yeast nutrient, Youngs super yeast compound, glycerine
560g sugar
Make up to 4.5 lt with boiled, cooled water. OG 1100.
Fermented for 3 weeks, FG 999, calculated ABV 13%. Killed further fermentation with 1 Campden tablet. Bottled in 6 bottles.
Looks crystal clear and tastes really good. :thumb:
