Changed the recipe from last night.

3.0 Kg Pilsner Malt
1.0 Kg Dark Wheat Malt
500 g Wheat malt
436g Halcyon
170g Vienna
50g Crystal
40g Chocolate

17 g Galena 12.5% 60 minutes
22g Amarillo 4.0% 12 minutes
22g Amarillo 4.0% 5 minutes
22g Amarillo 4.0% 1 minutes

Put this baby into my new corny keg with shiny tap tonight. Finished at 1.012. Tastes lovely. Am keeping the gas at 12psi. Is this how its done. First c keg experience. Really excited.

Are you using the continental taps or the enodis B. Both have flow control so you shouldn't have any carbonation/large head problems.
I think it's a question of personal taste as to how you gas your beer. Personally, I prefer really low levels about 3psi for real ales, but for hefe and the like, I prefer up to 40 psi.
Leave it as is for the moment and see what you think when 1st tapped ;) ....you can always lower it.

Also, remember that you need to have the gas level at serving temp. 12 psi at room temp will mean a lot less at 12 deg c ;)
 
The keg is inside at room temp. How much of a drop would you expect? When should it stabilise? It seems to be dropping a few psi over the evening so far, should it eventually hold at a constant. If so how long does this take. I don't know what sort of tap I have? Its shiny :P

We'll have to make an assumption first Bugno and that is that your corny keg/fittings to C02 tank aren't leaking.

Beer will hold C02 in solution, and the amount of C02 it will hold depends on the beers temperature.
When you 1st keg a beer it wont have that much C02 in it.

There are 2 ways to add C02...leave the Co2 regulator open all the time....works a treat unless you have a leak, or, set the regulator to 12 psi and open it several times a day to charge the beer keg.
I prefer the latter after losing an entire 7.5kg C02 keg to 4 leaking corny's :roll: ....over a week.

Eventually you will see no loss at all at the regulator and then your beer has been saturated by C02.
However, if you then chill the beer, more C02 will be absorbed and the pressure will drop, requiring topping up.
 
I'm gassing this up up with NO2Co2 mix with the widget world setup. The reading is zero this morning. I have put it back up to 12psi. Is this normal or have I a leak.
 
It will absorb quite a bit of gas, most probably you don't have a leak but keep an eye on it just in case of the 1 in a million chance that i'm wrong :lol:
 
How long before I can drink this on average

The usual rule of thumb is 1 week maturing for every 10 gravity points, so a 1040 beer has 40 gravity points so 4 weeks maturing

You can test for leaks by making up a small batch of sanitising solution, and then gassing your corny up. Put a drop on each poppet on the post, do the same on the lid where it seals. Next put some of the solution around the base of the post, enough to encircle it. If you have no bubbles you have no leaks :cool:

It can take up to 2 weeks for your beer to become fully carbonated to 12 psi. You can speed the process up by gassing the corny up to 12 psi, lying the corny on it's side and gently rock it back and forth.
The larger surface area when lying on it's side helps the C02 to be absorbed more quickly.
