Couple months back I got a load of grains and crystal but I need to get a bigger brew pot as I've only got a 5L stock pot.

I've also got 1.8kg of amber lme and wondered if I could get enough sugar out of the grain (3kg) without using bigger pots?

I'm totally busting to do another brew since my last extract smells odd despite it being left 6wks.
 
You can, but it will take a while. You can do a series of small mashes. But I'm not sure how well you'd be able to sparge it.

Maybe 1-1.4L per kg of grains in a BIAB method? You could possibly do 2 small mashes of 1.5 kg of grains using up to 2.1L of water each time. Pour both of these into the fermentor and add the LME and stir well? But it might be prudent to mash thinner giving yourself plenty of sparge water for 2 sparges.

You really ought to get a larger pot.
