Right up early swam for 30 minutes & planned to get some fencing post holes dug out and concreted in, but the rain has set in. So decided to get a brew on.

This has turned out nice, would have liked to get a little more mandarin but without making it any more bitter

Bit of a disasterous brewday, PID registered UUUU 30 minutes in, had to rifle about for the manual found the manual and find out that the sensor has either stopped signalling or failed entirely.
Removed the pump system and managed to tip some of the grain from the bag (BIAB) into the wort (Doooooh), when the mash was complete filtered through a hop bag to get back on track, with last 30 minutes of brew without any heat
Back on track and brewday runs to plan from here out

Right something does not seem right here 98% Efficiency, checked the hydrometer and thats fine, so that makes me think the yields must not be correct?

I keep trying to get the % abv down to under 4% but keep failing.

The Mash Temperature apparently affects the alcohol content v sweetness.

I got this from somewhere many years ago and always use it as a basic guide for High/Low ABV brews.

"BREWING TIPS

Strike Water = 2.6 litres per 1kg of grain.

Mash at:
o 55 to 66 degrees (High Alcohol for "dry") or
o 68 to 72 degrees (Low Alcohol for "sweet")
for one hour.

DO NOT exceed 75 degrees.

Stir after 20 and 40 minutes.

Heat SPARGE water to 80 degrees.

Lauter until wort runs clear and then Sparge at one litre per minute.

Stop sparge when runnings reach SG1.008 / SG1.012."


It seems to work and for less "sweetness" I just use more Bittering Hops.

I always look for 67 degrees, spent a good while today re calibrating, the PID seems to over shoot by 0.5 degrees, am wanting to add sweetness and drop ABV% so may look to up the target temp by 0.5 to 1 degree to see what I get, I think the problem is I don't brew the same beer twice consecutively.

I have just checked & mash temps range 55 to 72 degrees C link on content below.

Beta-amylase is said to be most active between about 131°F-150°F (55°C-66°C) and chops up whatever the hell gets in its way into smaller bits of mostly maltose, a highly fermentable sugar. Because of this, lower mash temps have been shown to produce more fermentable worts.

Alpha-amylase is quite different in that it is more active at warmer temps ranging from about 154°F-162°F (68°C-72°C), converting starches into maltose as well less fermentable sugars and unfermentable dextrins.
