Question about lager kits!

Having done a few lager kits now, mainly the
Youngs harvest but using a proper lager yeast my process goes something like this.

Make up the kit as per instructions but ditch the yeast. I have used saflager s 23 with good results. Us the brew fridge and keep it constant, I used 12 degrees. For 7 days, then up the temp to say 15 degrees for a few day. Back down to 12 for another week or until finished fermenting.

Dry hop now for 5 days or so and then transfer to a secondary and drop the temp as lo as you can get it. 1 or 2 degrees would be great.

Leave it for 4-6 weeks!

Bottle as normal and leave in the warm to carb up. Will take much longer as the amount of yeast left is tiny, but 3 weeks no rly has it ok.

Condition as normal then drink and enjoy.

Long process but crystal clear crisp lager can be had and enjoyed.
