New to the forum and fairly new to all grain brewing. Just made my fourth AG brew, a clone of 'black sheep ale' from a recipe in Graham Wheelers 'Brew Your Own British Real Ale'. Brew day went well. As there was no guidance on which yeast to use, I opted for Safale 04, which I rehydrated with 100ml distilled water for 30 minutes, then mixed it with 100ml wort and added it to the rest of the wort. The wort temp has been around 23c for the duration of fermentation. Start gravity was 1.044. Now just 36 hours later it is reading 1.015. The yeast has been working like fury, but still, it seems incredibly quick. Is this normal, or have I done something wrong? I did use a different hydrometer to check the first was working OK, but it showed the same value, so I can only assume they are both alright to use. Any help greatly appreciated!!
