this has been brewed for about 9 monthes had a taste it's a bit thick/too much juice can i add more water or more juice to thin it down or restart it again to make more wine

9 months is already quite creditable, but elderberry needs longer, ask us again next year.


That's probably not the sort of advice you were looking for though :whistle:

Thinning and re-starting might not be as easy as it sounds and could be more trouble than it's worth. Try blending it with another, lighter, finished wine.

I will still say though that in my opinion anything containing elderberry needs 2 years.
 
I agree with that. When I used to brew it I built up stocks so that I was drinking wine which was 6-7 years old. I have got a bottle of elderberry port which is 19 yrs old :whistle:
