How much yeast to use

Hi everyone, nice to meet you all. I'm new to this home brewing, and just wondered how much of a champagne yeast sachet should I use for 1 gallon? It say sufficient for 5 gallons!

I've heard people (/or the packs themselves) say that you should use the whole pack for anything from 1 to 5 gallons - sure that half the pack would be fine though - of course they will multiply, so half dose should be fine.
 
Up to a point the more you put in the quicker the initial ferment gets going is what I've always been led to believe.

If I'm using a 5g pack in 23l I normally make a starter. Just half a jug of warm water (28c - 30c) sugar and nutrient cover and put it somewhere warm for a few hours before adding to F.V. I assume half that (2.5g/ - 1/2 tsp) would work fine if making 1 gallon.
