Out of date yeast - Safale

Hi,

I have a few packets of dried yeasts - Safale 04 (x4) and (4 x) US05 variants.

The 04 expiry date was Jun 15 and the US05 this month.

I have stored them in a cool place for about 6 months after getting them then put into the fridge there after.

Should I just throw them out?

Whats the worst that could happen? Will they give a bad fermentation/off flavours etc or will rehydrating them prove they are ok before use?

Just rehydrate them before use and they should be good to go. If there not viable re-hydrating will let you know. A packet of dried yeast has LOADS of yeast cells far more than a 2L starter
