Alcoholic ginger beer

Hi,

I am planning on making some alcoholic ginger beer using the following ingredients

5 gallons water
1-1 1/2 lbs. ginger root, coarsley chopped
17 cups sugar
4 lemons, sliced
3/4 tsp. cream of tartar
1 packet champagne yeast

The recipe suggests the strength should be 5/7% I am hoping to make something closer to 10% is as simple as adding more sugar, and if so how much and what stage of the process woulld this be done.

A very quick rule of thumb for white sugar is that 1kg will ferment out to give 10% of alcohol in 1 gallon (4.54l). It looks like your recipe is using 3.25kg of sugar in 5 gallon so to get around 10% abv you will need to add an extra 1.75kg of sugar. Just add it all with the other sugar.
