Based on a few Old Speckled Hen Clones but using Pilgrim for bittering and Sovereign which seems to introduce a little vanilla. Mash will go on in the wee small hours, boil tomorrow morning.

just used Pilgrim for the first time with a Thornbridge recipe for an IPA that they don't brew any more, both bittering and aroma, and it has a pungent fruity flavour that combined well with Centennial and Styrian Goldings :thumb: and I'll definitely be using again :thumb:

I did a brew with Pilgrim and Bramling cross which received pleasant comments at TST so I've high hopes for this one.

Its tucked up for the night now, hit 67°C on the nail after doughing in.
 
Well its chilling, taking longer than normal as the tap water temperature is reasonably high!

Hit 1.059 as an OG (Effiency of ~85%) which means it should be about a 6% beer.

Overshot the Golden Syrup by 30g and had 9g of goldings loose in a bag that I put in at flame out otherwise its as the recipe.

4 weeks after bottling this tastes nothing like OSH. The Pilgrim hops come through and there a slight black treacle taste with a hint of vanilla.

I am now calling it just Roosta, its a lovely pint already but I suspect there is still some improvement to come so I shall try to leave it for winter drinking.
