Malic Acid is the main acid contained in apples and it causes malo lactic fermentation during secondary fermentation. Apparently, malic acid, also improves flavour profile of wine (I read so somewhere, I am not a wine brewer).

Citric acid is mopstly used as a pH regulator, a preservative and as an antioxidant. I sometimes use a small amnount of it in cider but I think it is mostly used in wine or other fruits drinks.
