I have got a Headcracker kit that I intend to use very soon.

Which of the yeasts that I have would be the best option.

White Labs WLP002
Gervin GV12
Safale us-05
Safale s-04

I did my first yeast starter last week using liquid yeast, and i am not too confident I did it right.
I have only ever rehydrated dry yeast once which was ok.
 
You should use your liquid yeast first because of the shelf life unless you've got an alternative plan for it. Why are you not confident about your starter? It's a very visual thing in that when it's worked you can easily see the separation between dropped yeast and spent wort.
