First brew: Spring Ale

Hi there,

Haven't posted in a while, I was waiting with baited breath to try my first brew. I was a little concerned how it would turn out since I didn't get as much out sparging as I planned and had a boiler leakage during the boil so lost a few litres combined. However the beer tastes pretty good, suspiciously good in fact. So if anyone is looking for a fresh, citrusy spring ale recipe this is what I did:

Ingredients: Munich malt 1kg
pale malt 3.5kg
Cascade hops 100g
Citra hops 100g
Yeast 1 packet
Irish moss 1 tsp
Dextrose 1kg

Mash: Pale malt 3.5kg
Munich malt 1kg
Liqour (hot water) 13 litres 65°

Boil: 20 litres of wort
Cascade Hops 30g 6.70% 60 mins
Cascade Hops 30g 6.70% 15 mins
Irish moss 1 tsp 15 mins
Citra Hops 30g 13.20% 5 mins

Fermentation: Safale S-04 Yeast 1 packet
Citra Hops (Dry hopped) 30g 13.20% 5 days (after 4 days in the fermenter)

Racking: Dextrose priming sugar 200g

Taste wise I'd say it could maybe have done with some more hops early on to give it a bit more of a bitter base, I am considering trying a similar brew (once I've got a few more under my belt) using Challenger up front with or instead of the Cascade, then Cascade and Citra later.

I left it in the fermenter 3 weeks rather than the 2 I intended (life got in the way) and had a few issues capping the bottles but I've contacted a local brewery over here for some advice in that area.

Looking for inspiration for my next brew. I am considering a Belgian Patersbier, done in a Czech style.

The GH recipe for Patersbier is fairly straightforward.

Pilsner 4.5kg
Saaz 30g @ 60m
Saaz 10g @ 10m

In fact, it is very hard to think of any beer recipe less basic and it don't get much more Czech than Saaz hops.

My only contribution is to suggest that M31 (Mangrove Jacks) yeast will reduce this right down to its essential, though worthy, contribution to brewing evolution. :whistle:
 
Thank you, yes actually its the GH recipe I am looking at, but hopefully I can find some hillertau mittlefruh for the second addition. I am having trouble finding belgian pilsner malt here, I can abbey malt or carabelge or standard pilsner malt.

Any Pilsner malt will be fine.
