1 Gallon wort in 5 Gallon FV??

Can anyone see a problem in fermenting 1 gallon of wort in a 5 gallon vessel? I've got some 1 gallon water bottles I could use but I don't want to worry about attaching a blow off tube.
 
Not really other than how are you getting your fermented beer into your bottles/keg? If your 5G FV has a tap that isn't right at the bottom your going to lose some beer even if you tilt your FV. If your syphoning you'll be fine

As a regular small batch brewer I can tell you your going to want to get as much beer from your 1G and it usually only givers you about 7- 8 500ml bottles max. The rest you lose to trub/sediment/krausen (For some reason the krausen on 1G batches is much thicker and doesn't disapear on 1G batches). Unless you are doing a big beer I'd use the 1G water bottles.
