I am brewing this week, an Amber ale....

Pale Malt, Crystal and loaded with goldings, going for abv of about 4.5-4.6%

I've just looked at my yeast that I top cropped from the last brew and am not convinced of its viability ( it has a bit of a wiff to it), if in doubt, chuck it out so my Mum used to say.

so choices....I can either culture some up from a bottle of Dronfield Redneck or order some new stuff from Malt Miller.

I am hoping to keep a bit of sweetness in the finished brew, I need a good hop aroma and for it to be a good yeast for bottling, anyone got any suggestions? I initially thought of WLP001 or WLP023 Burton
 
Gone right off S-04, i'm sure the last lot I used left the brew with a strange taste??

Plus I bought 500g of Nottingham. :D

WLP002 would be my recommendation. It will leave it very clear with a bit of residual sweetness!
 
Aye, WLP001 for me if you want clean, dry and hoppy; for a bit of residual sweetness, crank up the mash temp to close to 70C.
 
Are 001 and 05 the same strain, one in liquid form and one dried?

Sorry twas the talk going on when I was last involved in brewing :?
