I received a variety of hops for Christmas and am looking at designing some recipes.

2 of the hops are Pilgrim (12.68%) and Bramling Cross (6.89) and I was thinking of doing a hoppy bitter (EIPA) using the 2.

I was wondering if people had used these in combination, I intend using both for bittering and aroma.

The recipe I'm thinking of is and it will be AG#4 :-

Pale Malt 5kg
Crystal 400g
Chocolate 100g
Wheat Malt 100g

Bittering
25g of both Pilgrim and Bramling Cross

Aroma
again 25g of both Pilgrim and Bramling Cross

My overnight mashing gets about 80% efficiency which should make it around the 6% abv mark with an IBU of 58.

Brew day will probably be Wednesday so long as my effin sciatica calms down by then.

Any and all views gratefully received.
 
not in combination, but go easy on the aroma for bramling cross, mine picked up a really mothy dusty sorta taste in high quantities. in lower quantities, you get a wickid currant flavour that's to die for. It really suits darker ales too so you're onto something with the chocolate :thumb:
