After doing quite a few WOW wines felt it's the right time to move onto a fresh fruit one

Picked up 9kg of peaches cheap
Into a fermentation bucket with hot wat e 6 Camden tabs and 500g sultanas To 5. 5 gallons


Will be adding juice of a couple of lemons, yeast nutrition tonight when I get in
Then add the yeast tomorrow afternoon
When is the best time to rack? As times vary from 3 days to 7 days depending where you read it
Would I be better to rack into another fermentation bucket or into glass demijohn?

Any any other advice you think I might need or I have missed
 
Already added 2 kg of sugar.... also will add pectolase

Was thinking another 2kg then check the gravity

Also what the best things to use when racking fresh fruit? As I have never done it before
 
I usually rack into DJ's a week after it is fermented out

I just did some peach here

it would make an awesome sparkling but I couldn't be bothered

I also scoop out the bulk of the organic with a large sanitised strainer
after a few days of fermentation, most of the organic material will be floating on the top
then I syphon and filter through a muslin to my second stage FV
it stays in the FV undistirbed until I rack into DJ's to age in bulk
