I have a question. All along, I have been planning to put in a chimney by means of some 100mm or so pipe out of one of the walls, sort of like this very quick (and nasty) sketchup:
But now that I'm starting to think about it more, it's quite difficult!
I'm fine with the bit from inside to out including the chimney (and condensation trap) but how can I attach/position it over my boiler to get maximum extraction? I don't want to buy a fan extractor if I can help it.
I could cut a hole in my boiler lid and make it moveable on/off?
I could construct some sort of device to sit over the boiler?
Basically I want to catch almost all the steam but I also need access for hop and other additions.

How about some flexible pipe attached to the chimney that you could put over the boiler, and that you could hang out of the way when not needed? With a cowl?

Here are today's efforts. Made some great progress today!
I have decided on the steam extraction. I have contacted a local fabricator to ask about making me one of these out of stainless:
I have a rough idea of an estimate after chatting to one of the sales guys. Then I plan to route it to some of that manrose 100mm ducting to go outside via a chimney. I need the flexible ducting so that I can get the lid on and off! I will replace the ducting with something more shiny in the future!
I have a few more pics but will be doing a bit more tomorrow so will post them all up tomorrow.

Yes I have a tap area. Just to the right of the hatch as you look outside. I have room for a couple refrigerators under the counter. I have 1 corny keg at the moment but will no doubt but more. I'd like to have 3-4 taps eventually.
