Hey folks,
I would like to brew up a small batch of pumpkin beer for the autumn and wondered if anyone had a good recipe they could share? I like the idea of combining the pumpkin with honey to make a honey pumpkin beer.
 
There is a pumpkin ale recipe in Greg Hughes' book. I don't have it with me but I could have a look early next week and send you the gist of the recipe...I think you just roast a pumpkin for an hour and then cut up and add to the mash but I could be wrong.
 
For a 20L batch you want about 2kg of pumpkin, roasted until soft and mushy. Just add it into the mash with the grains. Probably more important is getting the spices right. The recipe from Classic Styles uses the following spices added at the end of the boil:
1/2 tsp cinnamon
1/4 tsp ground ginger
1/8 tsp nutmeg
1/8 tsp allspice

It uses pale malt, crystal, aromatic and special roast.
