Seriously though, good beer shouldnââ¬â¢t be rushed. Lagers, especially, need care but most ââ¬Ålagerââ¬Â kits actually have an ale yeast anyway. The Crossmyloof yeasts have a good reputation for finishing quick so you could swap out the kit yeast for their Kolsch or California Common yeast.
