I have a couple of vials of Whitelabs yeasts in my fridge that I haven't gotten around to using that are dated as best before end of December 2013. Will they be OK?
 
I recovered a wyeast pack that was only 4.5 years old. . . Started in 4 days too.
 
Haha, nice! Well, I'll use one of the Hefeweisen yeasts first as a test as they are fairly forgiving.
 
Just make a starter and it'll be fine.

Factor in that the starter may take 24hours longer than normal though.

Will be ok.

I pitched a vial of WLP300 into a wheat beer that I made on Friday with no starter and it's worked just fine. Good, resilient stuff. :clap:
