for one bottle of red wine:

100g caster sugar heated and dissolved in 100ml orange juice, to this add your red wine and heat gently with a little orange and lemon zest, three slices of orange and lemon, 5 cloves, 5 juniper berries, 1 cinnamon stick, 2 allspice berries, 1 star anise, pinch of mace and a few shots of brandy :whistle:

Heat the wine very gently and never boil as you will loose the alchol and it will become bitter!

We made some yesterday for a party we had...

2 bottles of cheap cab sav
2tsp Grated Fresh Ginger
One orange with about 10 - 15 cloves stuck in it
2 oranges sliced
2 lemons sliced
4 table spoons honey
4 table spoons sugar
cinnamon stick 1.5 inch
1.5L water

Nice and easy - stick it all in a stock pot and bring to a gentle simmer, hold at a gentle simmer for 20 mins, done.

Went down a treat, drunk in the -2 temps stood by a hot chimanea and a bbq roasting chestnuts.

Yea it gave it a nice warm twang. I awoke today to fine that there was some left, so thats been bottled, we will drink that on Christmas Eve :cool:
