I have been foraging and found 3 Damson bushes loaded with sweet fruits so am looking to make a damson port....

Question is it will be 2 weeks before I can start this off as all my buckets and .dj are bubbling away. I have frozen all my 6lb of damsons, blackberries and elderberries for this until then. Do in put all my frozen fruit into the bucket and put boiling water over it or do I leave to thaw for a day or so in the bucket and then pour boiling water over them ?

Also .if anybody has a tried and trusted recipe for 1.3kg damsons, 700g elderberries and 1kg of blackberries that would be great.

Yes you can use frozen damsons. I used to freeze whole and squish when thawed removing the stones. However Moley recommends de stone before freezing, don't know why though. :thumb:
