I use the double drop method to get rid of the "cold break" as I use a cfc.
Rightly or wrongly I use the "bubble rate" to determine the stage of ferment!
After about 7 days when you expect the end of ferment, the fun started.
At this stage I expect the rate to slow down to 2 - 3 mins, oh no, it goes back up to 34 secs.
Then it slows to just over a minute, then it speeds up again.
After day 37 (today) I've got fed up with it and put it in the keg with gelatin finings.
SG 1006, ABV 5.9%.
It smells and tastes great if a little nesh yet :wha:
Just thought I'd share this little bit of trivia with you

I remember you telling me this at matchfest, it is rather odd :hmm:

The strange thing is Wez, it's not the first brew I've had that has taken a long time to ferment.

I'm brewing a pale hoppy beer tomorrow, last time I brewed it I had it from grain to glass in 9 days

I might take more time over this one :D
