I've been on forum reading posts for couple month now so decided it was time to make my first post.

Got into this homebrew malarkey by wondering what I could do with all the fruit from my plum tree.

Well, I didn't fancy making jam, n plum crumble.. ya can only eat so much.
Wine it is then!

I've set several batches of plum wine away, elderberry and blackberry and it's all aging in my brewing shed.
Will taste first bottle after 12 months.

I've also brewed quite a few different TC's some good, some average n some manky!
Think fermenting out to 0.996 makes them too dry. (not tried back sweetening yet)

My latest quest was pasteurisation n it's worked first time on latest batch with no bottle bombs! Beginners luck!
Will see how it goes on nxt batch!
