Hello All,

I was hoping that you might be able to give some pointers regarding a hefeweizen recipe I'm calling Humble Hefeweizen II:

Recipe Specs
----------------
Batch Size (L): 4.5
Total Grain (kg): 1.12
Total Hops (g): 5
Original Gravity (OG): 1.050
Final Gravity (FG): 1.012
Alcohol by Volume (ABV): 4.9 %
Colour (SRM): 5
Bitterness (IBU): 14
Boil Time (Minutes): 60
Brewhouse Efficiency (%): 65

Grain Bill
----------------
800g Thomas Fawcett Wheat (71%)
300g Thomas Fawcett Lager (27%)
20g Thomas Fawcett Crystal 90L (2%)

Hop Bill
----------------
5g EKG @ 60 Minutes (Boil)

Water
----------------
2x cheapest 5L bottles from Co-op.

Mash Schedule
----------------
15 min decoction at 55°c.
45 min infusion at 67°c.

Notes
-----------------
Fermented at ~20°C with Crossmyloof Kristallweizen yeast.
Primary fermentation - 7 days.

My main concern is with the mash schedule, I've seen a lot of recipes calling for a decoction mash and multiple steps, but I've never done a decoction step before, usually I just do a single infusion. Does my proposed mash schedule seem reasonable?

I have a slight concern regarding the EKG hops, but I figure that seeing as the entire recipe is actually using English malt, it seems apt that it should use English hops.

Any feedback or pointers would be greatly appreciated!
